Recipe: Bredded beef meat, Silpancho from Bolivia!

This is a traditional dish from Cochabamba, Bolivia. This delicious dish has toasted rice, toasted boiled potatoes, Silpancho the meat, tomato with oignon and cilantro salad and optional it comes with a fried egg on top. In many countries in Latin America, you will find dishes with rice and potatoes together, this is very common. My family loves Silpancho. It is delicioso!

Start by boiling potatoes, meanwhile cook the rice, then make the tomato salad. You will save lots of time by doing this order. You will need to be very organized with this recipe, since you will need lots of pans and pots to cook this.

Potatoes
I used red potatoes. Just add water to cover the potatoes, once the water boils, in my pot it takes about 10 minutes until water boils, then lower the heat to medium, low and cook for 20 minutes. Let the potatoes cool down, then peel potatoes. Cut in slices 0,5cm (about 0,20 inches) Then toast the potatoes with little shortening or butter. This process takes about 40 minutes total.

Rice
1 cup long grain rice
1 clove garlic
2 cups water
salt
oil

1.add oil and garlic, give the oil flavour, then add rice.
2.toast the rice until you get a nice light brown color.
3.add water and little salt.
4.cover and cook after it boils (in my pot after about 3 minutes), the lower heat to low and cook for 10 minutes.

When rice is ready, see little holes!

Tomato salad

1 Tomato
1 small white or red oignon
1 garlic clove
little cilantro (Korianderblätter)
1 tsp oil, white vinegar, lemon juice
salt, pepper, garlic powder

Silpancho

desired amount of sirloin steak (Hüftsteak), this is less expensive than a filet…
Breadcrumbs
salt, pepper
little water to sprinkle the meat so that the breadcrumbs stick to the meat.
Shortening or oil to fry. (Pflanzenfett)

My butcher pounded the meat, has to be flat!

Prepartion time: Like I said at the beginning of this recipe, you will need to be organized to be productive. I have two little boys that need all my attention and took me double the time to finish this meal. You could finish this in one hour, it took me almost two hours, because my son Dan was demanding my attention!
If you start boiling the potatoes, meanwhile you could cook the rice and the tomato salad, then you peel potatoes. This you could do in 30 to 40 minutes.
Then bread your meat and fry, this takes just less than 10 minutes.
E voilà!
Optional: Fried egg on top of Silpancho!

Optional: The egg yolk gives this special flavour to everything!

Buen provecho!
