Recipe: Cuban Ropa Vieja, Shredded Beef in a Tomato, Pepper Sauce!

Another traditional meal from Cuba, Ropa Vieja. Yesterday I showed you the Vaca Frita, today is also with shredded beef, but the Ropa Vieja has the tomato sauce. Ropa vieja means old clothes. The combination of the garlic, onions, peppers, fresh tomatoes, the cumin and the sweet paprika, gives a beautiful taste to the meat. Please try this recipe as well and if you go to a cuban restaurant, this is not to be missed.
I used the recipe from www.univision.com as a guidance. Thank you very much.

Shredded Beef ( I used the same meat I cooked yesterday for the Vaca Frita, I used 200g)
1 white onion, sliced
1 clove garlic
½ of green bell pepper
½ cup tomato sauce ( I recommend you make your own. Boil water. Make a cross on your tomato, put the tomatoes in the hot water for about 3 minutes, then you can peel the tomatoes easily. Take out the seeds. Transfer tomatoes to a mixer, add salt, one garlic and little olive oil, like 1 or 2 TBSP, with this sauce, the Ropa Vieja will taste delicious)
½ cup of the beef soup that I made yesterday (see recipe: Vaca Frita March 13th. 2013)
¼ tsp cumin
⅛ tsp sweet paprika
salt

Ingreditents

1.warm olive oil, add onions, garlic and mix. When the beautiful aroma comes out, then add the peppers and mix.
2.add your tomato sauce and your beef soup and mix.
3.add cumin, sweet paprika, salt pepper and mix, then add the meat.

Before you add your peppers, wait until you smell that beautiful aroma of onions and garlic in olive oil.
Mix all your ingredients well, before you add the meat
That’s it, fresh and quick!

Preparation time: 20minutes if you make your own tomato sauce, if not, then 10 minutes.
Cooking time: 5 minutes
The reason why I cooked Ropa Vieja so quickly is because I had my beef soup I cooked yesterday, the shredded beef is also from yesterday.

I hope you enjoy this traditional meal from Cuba.

Buen provecho a todos ustedes!
Susi
