This is a classic recipe. I would say that every Japanese family enjoys this recipe. Carrots and Burdock in a sesame dressing.The point is not to overcook. You want those veggies to be crunchy. This can be for several days in the refrigerator. It goes well with any type of fish, meat, or just enjoy over good Japanese white rice.
1 TBSP sesame oil
1 TBSP mirin (sweet rice wine)
1 tsp white sugar
3 TBSP sesame seeds (before serving)
1 TBSP soy sauce
1. cut the veggies, julienne.
2. in sesame oil, cook carrots and burdock, then add all the liquid ingredients.
3. just before serving, add the sesame seeds.
PS: Just be careful serving for small children, they will have a difficult time chewing, because the vegetables are pretty large for their mouth. Also, if you have Elderly at the table, be careful as well. They always have difficulties chewing as well.
