A British recipe that I made many adjustments. I cooked the barley just in water and vegetable stock and add some thyme, that was the special flavor. But the key to the perfect flavor for the barley is: (first the ingredients)
1/2 cup barley
1,5 cup vegetable stock
1,5 cup water
1/2 tsp thyme
1 garlic clove, chopped
1 cup spinach
white wine to deglace
1. in olive oil, brown the barley, then add all liquids, salt, pepper, thyme, bring to boil and lower heat to mid-low, cover and cook for about 1 hour.
2. once the meat is cooked (see below), then deglace your pan with white wine, add garlic, brown it, then add cooked barley and spinach, mix.
For pork meat:
pork loin, quantity desired
salt, pepper, curry
1. in olive oil, brown meat, all sides, then cover and let it cook for about 4 minutes, covered.
