Recipe: Mojo on Tilapia

This is another version of a fresh salsa, called Mojo, originated from the Canary Islands. A very traditional salsa from Cuba, but countries in Central America, each one has its own version of Mojo. The main ingredients are olive oil, vinegar, citric juice, salt, pepper. This recipe is from a friend from Puerto Rico. She adds all the peppers, tomatoes and onions she wants, then she adds the ingredients mentioned below. Let’s don’t confuse with Mojito, which is an alcoholic beverage, a cocktail with herbs, lime, cane sugar and rum, or with tequila in Mexico.

A similar recipe in every Latin American countries, Pico de Gallo.

1 red bell pepper

1 orange red bell pepper

1 green bell pepper

1/4 red onion

1 large tomato

1 lemon juice

3 TB white wine vinegar

2 TB olive oil

3 TB grape fruit juice

cilantro

salt, pepper

1. cut all the veggies in little cubes then mix with all ingredients and let it rest for about 30 minutes.

2. grill your fish, let it cool and then add #1 on top of it.
