Recipe: Pudín de coco, Coconut pudding

This recipe is from the book “El Menu diario Colombiano”. I finally have a recipe from Colombia. Thank you to my friend here in Miami!  This pudding is very sweet, the recipe requires 1 and 1/4 cup of sugar, I thought that was more than I can handle for 1 liter milk, so I reduced the amount of sugar to 3/4 cup and I am glad I did. This pudding does not require eggs, so no worries if you cooked the egg yolks or little accidents like that, but you will constantly need to mix the milk, while bringing this to boil. Ken loved this desert, but Dan could not handle the coconut, it is okay, Dan is not ready for coconut yet or he might just not like it. My husband does not like coconuts. This desert is delicioso, refreshing!
Here is the recipe:

4 cups milk

3/4 cup sugar

1/2 cup coconuts

1 cinnamon stick

3/4 cup cornstarch

1. in a pot, bring half of the milk with all ingredients except cornstarch to boil, mix well.

2. add cornstarch to the other half of milk and add this slowly to #1 and cook in low heat for 10 minutes.

3. put this in cocottes or a big pirex and let it cool down.

Dulce, dulce!
