This recipe is from my book Savoring Portugal from Williams-Sonoma, the other recipe that I have under Portugal, with shredded chicken, I used basically the same ingredients…My family loves this dish, best is to eat with white rice.
300g raw shrimps, peeled
1/2 tsp curry (or more or less)
little ginger, chopped
1/2 tsp lemon juice
1 tsp butter
1/2 white onion, chopped
1 garlic, minced
1/2 red bell pepper, seeded and chopped
1/2 TBSP flour
1/4 cup fish stock (If you buy shrimps that are not peeled, then you can make a shrimp stock with the shells of the shrimp)
1/4 cup heavy cream
1. in butter, caramelize onions, garlic and the red bell pepper, then add the curry, ginger and the lemon juice, mix.
2. add shrimp, mix, saute for about 3 minutes or until shrimps look orange.
3. add the stock, mix and cover. Let it cook for another 5 minutes, add the flour, mixed in a little cold water and add cream, salt, pepper.
4. cilantro, before serving.
Simple as that!
