If I understand it correctly, “fritada” means “fried”, but this chicken is marinated in chicha morada, a sweet drink made out of purple corn, this has to be marinated overnight…The taste is sweet, but it has a blend of onions and the bay leaf. You may add some cloves as well.
500ml or 1 liter of chicha morada, depending on how many drumsticks you have.
1/2 onion sliced
1/2 tsp powder cumin
1 bay leaf
1. Mix all ingredients, cover with aluminium foil and let it marinate for a night in the refrigerator.
2. cook in a pot in low heat for about 1 hour. (bring it to boil first, then lower the heat to low)
