Recipe: Guiso de pollo con patatas y espinaca. Chicken stew with potatoes and spinach! (Peru)

This is a recipe from my Peruvian friend Karinna, so I am very happy to introduce you a home made recipe from Peru. The base from many Latin American dishes (aderezo) is chopped onions with chopped tomatoes, then you add the spices you want and the broth, that is main. Unlike in some European countries, you brown the meat with onions and others then at the end you add heavy cream.

Here is the recipe:


5 drumsticks

1 to 2 potatoes cut in little cubes

3 cups of fresh spinach

salt, pepper

1/6 tsp cumin

Pimentón de la Vera ( a sweet paprika powder from Spain)

1/2 onion, chopped

3 cups water

1 small tomato, cut in cubes ( I remove seeds, you don’t have to)

Broth if desired for flavor

olive oil

1. in olive oil caramelize onions with tomatoes, add salt, pepper, cumin and pimentón de la Vera and mix all.

2. add water or broth

, once water boiling, add drumsticks and cook all for about 20 minutes, covered in medium, low heat.

3. add potatoes and cook for another 10 minutes, covered.

4. add spinach and cook for 5 minutes and ready to serve with white rice.

Asi de simple.
