This recipe is from my friend Karinna, her husband is from Spain, they eat a lot of vegetarian dishes. She gave me one of hers. It is definetely a MUST try, you have everything in this salad, the proteins, the vitamins and the fibers. Perfect for the summer. The kids loved it! Easy to chew for them. I highly recommend, on top is :low in sodium.
1 can lentils, contain 350g
1/4 of each bell pepper :red, yellow, green, cut in mirepoix, little pieces.
1 tomato, cut in cubes
little onion, chopped
1 apple, cut in cubes
1 carrot, cut in little pieces
2 cans of tuna
olive oil, balsamico, salt (quantity based on your taste).
Mix all ingredients y ya esta!!!!
