On a Sunday afternoon, after playing with the kids, the time for cooking comes quick! I had the bag of green beans that I had bought at Whole Foods…I really created this recipe with the ingredients I have on hand, without thinking too much:
1 bag of green beans
1/4 cup quinoa
some vegetable stock
1/4 cup nuts of Planters (Nutrition Men’s Health that has almond, peanuts and pistaccio), chopped
1/2 lemon juice
little Worceshiresauce
1/2 tomato in cubes
1/4 cup of your favorite cheese in cubes
1. boil about 3 cups of water and add a little vegetable stock. Wash quinoa, add this into boiling water and let it cook for 20 minutes. Once ready, set it aside, drain.
2. cook your green beans also in boiling water with little vegetable stock, for about 15 to 20 minutes. Set aside when ready.
3. chop all nuts.
4. mix all ingredients, except tomatoes and cheese. Once all the flavors are blended, then add the tomatoes and the cheese, mix.
