The most important thing to say here in this recipe: It is very HOT! and not recommended for children or for people with some health concerns. The same steps as my last recipe with Salsa with Chili Poblano…
4 tomatillos
2 garlic cloves
1/2 jalapeño, remove seeds
1 can Chipotle chili (I bought GOYA for US 1,69)
little cilantro
1 tsp. lime juice
salt, pepper
1 tsp. olive oil
1 TBSP red onions
1 TBSP sugar
1 TBSP vegetable stock
1. brown in a pan the following ingredients: tomatillos, garlic cloves and jalapeño.
2. Then put #1 and all other ingredients in a blender.
3. serve with tortilla, corn chips or with grilled meats.
Picante pero rico.

If you want to take a little heat out, just put the chipotle sauce from the can in and not the actual chiles chipotles. When I make caldo de albondigas…I only use the sauce! great blog!
Thank you so much for your comment! You are right, I think next time I should try to add only the sauce, although I really love the heat to it, but it was just too picante. Thank you again for your comment. Susana.
No prob! Chipotles definitely have some heat!
Oh yes, my friend told me, that we cannot find Chipotle here in Florida and told me to buy the one in the can, so I did. I was very surprised of the heat…but I love it!
